Strawberry/Blueberry Cobbler

2 pints strawberries (hulled and quartered), 1 pint blueberries, 1 cup sugar (divided), 1 tablespoon cornstarch, ¾ cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, 1 egg, ¼ cup milk, 1 teaspoon vanilla extract, 6 tablespoons butter (melted)


Heat oven to 375 degrees F. In a bowl, combine the blueberries and strawberries with 1/3 cup + 2 teaspoons sugar and 1 tablespoon cornstarch. Let sit 10 minutes. In another bowl, mix your dry ingredients: flour, ½ cup sugar, baking powder, and salt. In yet another bowl, mix your wet ingredients: egg, milk, vanilla, and melted bu#er. Add your dry ingredients to your wet ingredients, and mix well. Drop batter over the berries by the spoonful. I don’t bother to spread it evenly over the top, I like the look of seeing some of the berries between the crust mounds. Bake 25-30 minutes, or until the crust is golden brown. Serve warm, preferably with ice cream!
